Makoto-ya Toyama Black Ramen
Makoto-ya is from Toyama prefecture which is steeped in history as a historic castle city in the Hokuriku region of central Japan. Makoto-san is the ramen chef and owner of Makoto-ya and is a self-taught ramen chef who is always improving and iterating on his creations.
Makoto-san’s Black Ramen contains a deep and rich jet black shoyu (soy sauce) based broth. Interestingly, this ramen was originally created as a side dish to go with rice then adapted to be it’s own ramen dish. Unique to this ramen is the extra thick noodles with a chewy (mochi-mochi) texture making this a local specialty in Toyama and very difficult to taste even in other parts of Japan.
The rich broth combined with the thick noodles makes this a perfect warming dish during cold winters.
